One of the best ways to get a feel for Segovia is to walk along the Eresma Valley, a lush green promenade that traces the lower part of the city, offering unique views of the medieval walls and the Alcázar. Segovian gastronomy is hearty and delicious. The star of the show is the roast suckling pig (cochinillo), famous for its crispy skin and tender meat—but that's not all. Judiones de La Granja (large white beans), Cantimpalos chorizo, and the traditional Ponche Segoviano—with its layer of toasted marzipan—are essential to complete the experience.

To experience tradition in its purest form, nothing beats Mesón de Cándido, a classic restaurant right in front of the Aqueduct where the ritual of slicing the suckling pig with the edge of a plate is part of the show.

Just a few kilometers away lies La Granja de San Ildefonso, famous for its Royal Palace and monumental gardens, making it ideal for a peaceful day trip. Another great option is Pedraza, a perfectly preserved medieval village that seems frozen in time, enchanting visitors with its cobbled streets and historic atmosphere.
